Another Cheese
This week at the market I was able to taste several varieties of Lorraine-region cheeses, le Saulnois and le Verga. Both were delish, but I chose the stronger, drier verga.
It's a bit like a mild cheddar, but without the cheddar-unique flavor. It's a hard cheese, aged from 8 weeks to 10 months, according to lorraine-traditions.com, the only website (it's in French) I found that mentions this cheese. However, in my googling for more information about my CotW (Cheese of the Week) I found this great British site: All About French Cheeses, which has a really nifty clickable map that gives you the cheeses local to that region.
